Tonno rosso specie a rischio: Coop rinuncia alla vendita

Il numero degli animali, piante e altri organismi la cui sopravvivenza è minacciata, sta aumentando di anno in anno. Il Wwf ha redatto un sintetico elenco di vincitori e perdenti per il 2007: per alcune specie, grazie a misure protettive e all’impegno delle organizzazioni ambientaliste, si sta assistendo a una leggera inversione di tendenza. Stando alla Lista Rossa pubblicata dall’Unione Mondiale per la Conservazione della Natura il 39% delle piante, degli animali e di altri organismi viventi sottoposti a valutazione sono sicuramente a rischio. Ciò corrisponde a un patrimonio di 16.306 specie, un numero che nel 1996 ancora si collocava a quota 10.533.
Il WWf sottolinea:

Flotte decisamente sovradimensionate per numero di imbarcazioni, capacità di cattura, tecnologia impiegata, in grado di pescare quantità di tonno rosso di fatto non più disponibili nel Mediterraneo: i maggiori paesi responsabili sono Turchia, Italia, Croazia, Libia, Francia e Spagna. Con l’Italia maglia nera tra i paesi dell’Unione europea. Per mantenere la capacità di pesca entro i limiti legali del 2008 stabiliti dall’Iccat (Commissione Internazionale per la Conservazione dei Tonni nell’Atlantico), la flotta nel Mediterraneo dovrebbe dismettere 229 imbarcazioni. Se poi ci si volesse attenere ai limiti dati dalla comunità scientifica il numero salirebbe a 283, 58 delle quali tra gli Stati membri dell’Unione europea. Il dossier mostra anche che con tutta probabilità l’Italia avrebbe denunciato quote inferiori a quelle effettivamente pescate: ad uno sviluppo della flotta negli ultimi 10 anni molto consistente (27 nuove unità dal 1997 ad oggi) sono corrisposte quantità di pescato sempre inferiori.

Il WWF lancia un appello in aiuto del tonno rosso, la prima a rispondere è stata la Coop, che decide di non vendere più il pesce per dare il suo contributo alla salvaguardia della specie .

  1. IN ITALIA SI VENDE TONNO DETERIORATO PER TONNO FRESCO,

    E voi ve lo mangiate crudo. Certo, questo vale per molti prodotti. Ma in particolare per il tonno.Quasi tutto il tonno consumato nei ristoranti, oppure acquistato sui banchi delle pescherie è importato da paesi terzi e principalmente da : Maldive, Sri Lanka,Yemen e Oman.Il tonno arriva sui banchi delle pescherie con già 5-7 giorni di vita (talvolta 8-9 giorni).In una settimana le caratteristiche organolettiche del prodotto si modificano, in modo sostanziale :

    – Batteri : aumento della carica batterica
    – Istamina : enorme aumento dell’istamina
    – Colore : ossidazione e dunque il tonno assume una colorazione marrone.

    In sostanza viene venduto per “fresco” un prodotto già deteriorato, questa situazione assume inoltre particolare rilevanza quando lo stesso viene servito crudo (!!) o parzialmente cotto.

    PERCHE’ SI IMPORTA TONNO FRESCO ?

    Perchè costa poco e perchè permette dei margini di profitto più alti per gli intermediari coinvolti. E questo a scapito della salute dei consumatori. Inoltre il trasporto del tonno via aerea contribuisce in modo importante all ‘inquinamento dovuto a combustibile e maggiore impiego di imballi.

    MILIONI DI GIAPPONESI NON SI POSSONO SBAGLIARE !

    La maggior parte del tonno consumato in Giappone è SuperFrozen, il SuperFrozen è un tonno classificato, lavorato e surgelato sino a -71°C direttamente sulla nave e sino al punto Eutettico. Da quel momento viene costantemente mantenuto a -55/-60°C, cioè IBERNATO. A questa temperatura, il tonno mantiene le sue caratteristiche naturali, una volta decongelato ritorna ad essere

    – naturalmente rosso
    – naturalmente sano
    – qualità costante

    Tale tecnologia implica lo stoccaggio in speciali celle in grado di mantenere tali temperature lungo la catena di distribuzione.
    Il tonno SuperFrozen viene venduto in Giappone, Canada, USA ed, ora, grazie ad un’azienda europea anche qui in Italia.
    Il tonno SuperFrozen non deve essere decongelato come un normale prodotto, bensì ci sono delle semplici procedure da seguire così riassumibili :

    – lavaggio del pezzo di tonno da utilizzare
    – immersione in acqua calda e sale
    – a riposo in frigorifero per un’ora
