Un Ferragosto vegetariano per ridurre l’impatto ambientale di esodi e grigliate

Ferragosto all’insegna del caldo, dei grandi esodi dalle città verso il mare o la montagna, anche per chi non è andato in ferie ma non rinuncia a trascorrere almeno una giornata in compagnia di amici e parenti in località turistiche. Oltre ad usufruire del car pooling per gli spostamenti verso i luoghi di vacanza, misura utile a risparmiare emissioni e denaro, si può diminuire l’impatto di questo giorno di consumi alle stelle puntando su un menu vegetariano, che tra l’altro contribuisce a sopportare meglio il caldo, con la sua leggerezza e freschezza. A suggerire di stare lontani dalle afose e pesanti grigliate di carne è l’associazione Gaia Animali & Ambiente Onlus, che sul suo portale, tra l’altro, mette a disposizione tante ricette gratuite e gustose, da scaricare per un Ferragosto originale ed alternativo.

Come ha spiegato Edgar Meyer, presidente di Gaia:

Niente di meglio, per il Ferragosto, che la classica, sana dieta mediterranea. Anzi, meglio ancora la dieta vegetariana: verdure alla griglia e frutta, primi piatti freddi e freschissime insalatone verdi: da quelle tradizionali a quelle a base di farro o orzo.

Per i primi piatti, il suggerimento è di puntare sulla pasta fredda, sui sughi alle verdure, riso con mais, piselli, menta e limone. Per i secondi piatti via libera a tortini di zucchine, peperoni e ancora la frutta estiva:

carote, albicocche, mango, melone, papaia e nespole, molto ricche di beta-carotene, che protegge la pelle preparandola all’abbronzatura. I più curiosi possono cimentarsi con pietanze curiose come il Kibbé alle noci.

Come spiegano gli ambientalisti:

Oltre che fresca, leggera e gustosa, la dieta vegetariana è pacifica e non violenta: risparmia milioni di animali tra capponi, caprette, maialini, vitelli. Le cifre della mattanza di animali sono infatti impressionanti. In Italia 600 milioni di animali vengono uccisi ogni anno per finire sulle nostre tavole: 570 milioni di polli, 9 milioni di suini, 6 milioni di agnelli, 4 milioni di manzi, 2 di conigli, 2 di vitelli, 3 di pecore e capretti, 500.000 equini. L’alternativa, per di più sana e gustosa, esiste.

Da non trascurare, l’aspetto ambientale dell’evitare o comunque ridurre il consumo di carne:

L’industria mondiale delle carni, spiega Meyer, si è divorata fino al 40 per cento delle terre coltivabili del pianeta e ha trangugiato ingenti quantità di riserve di carburanti fossili affinché un’esigua percentuale della popolazione terrestre possa banchettare con gli alimenti più in alto nella catena alimentare globale mentre centinaia di milioni di altri esseri umani si trovano a dover far fronte a malnutrizione, carestia e morte. E ancora: la carne (ottenuta da bovini cresciuti a mangimi) che portiamo in tavola è la seconda più importante causa del cambiamento del clima. Dagli studi della FAO risulta che il bestiame produce il 18 per cento delle emissioni di gas serra, ovvero complessivamente più di tutti i mezzi di trasporto.
